Hot X Buns
This recipe is perfect for a small batch of Hot X Buns if you’re feeding a whole crowd! I think you could even cook them in your AirFryer if you need to, however turning the oven on as you place them in there helps them to prove a little more for a fluffier treat!

Hot Cross Buns
Ingredients:
Dough:
60g milk, lukewarm
1 tsp instand yeast
140g plain flour
Pinch of salt
1 Tbsp caster sugar
2 Tbsp melted Butter
1 Egg
1 tsp ground cinnamon
1 tsp ground nutmeg
½ tsp ground cloves
¼ cup Sultanas (or Chocolate chips!!)
Cross:
1 Tbsp plain flour
2-3 Tbsp water
Small splash of oil
Sugar Syrup
¼ cup of caster sugar
½ cup of water
Steps for cooking:
Add the milk and yeast to a small bowl and mix together. Set aside for a few minutes to wake the yeast up.
In a separate bowl mix together the flour, salt, sugar, cinnamon, nutmeg and cloves. Set aside for a moment.
Add the egg into the milk mixture and whisk together. Add in the melted butter and mix in. Make a well in the centre of your flour and pour in the wet mixture, mix together until it forms a shaggy dough.
Dust your bench with a little flour and tip your dough out onto the flour, pressing gently into a rectangle. Add the sultanas on top of the dough and fold the dough over, kneading the sultanas into the dough. Only knead until the dough comes together, shape into a ball and add back into your bowl covering with a tea towel. Set aside for at least 30 minutes to rest.
In a small bowl, mix together the flour, water and oil until it’s a smooth but thick batter like mixture. You don’t want it runny as this creates the X on the top of the dough but if it’s too thick it won’t pipe. Make sure it’s not lumpy either. Once it’s mixed add it to the corner of a ZipLoc bag and set aside.
After 30 minutes, dust your bench with a little four and tip your dough back onto the bench - ensuring your DON’T KNEAD IT. You don’t want to knock any of the air out of it at this point. Carefully divide the dough in half, then in half again so you’ll get 4 Hot X Buns. Add them to a baking tray, placing them close and snug together.
Snip the corner off your ZipLock bag and pipe a X over the top of your buns.
Turn your oven onto 180C and place your buns in the oven, cooking for 20 minutes.
Meanwhile, add. your sugar and water to a small pot and set on a medium-low heat, stirring until the sugar dissolves. Set aside.
As soon your Hot X Buns are out of the oven baste the top of the buns in the sugar syrup with a pastry brush. This makes them lovely and shiny!
